BYU will probably not fight it, but (with few exceptions) contracts do not have to be writing to be effective
certainly it's better to be in writing to prove that all parties agreed to the terms, but so long as you have a meeting of the minds, offer and acceptance and consideration. probably can easily prove all these through emails and such even if the actual contract wasn't signed.
