Depends on interests, but I'd consider options that create outlier opportunities
Nursing, teaching, etc. can be flexible and rewarding. They also are in-person with limited upside.

I'd consider jobs that create interesting, part-time opportunities that can be done at home and have potential to create outlier life experiences or grow into something more.
- UX/UI designer: great contract work, high wage, but can also stumble onto a new startup/product and grow with it
- Developer: same reasons
- Accounting/finance: bookkeepers, CPAs, tax, family offices, etc. Can scale up and find really interesting opportunities with plenty of money
- Marketing: if they're good and financially-minded, this can be a great path to contract work

Fairly common theme is something with fairly technical skills or experiences, but can also add technology and process to scale if they want to or automate parts of their job be worth more than hourly wages. These also create a chance for them to start their own business if they'd like
