by pilots not crewing that flight to sit in if it wasn't be used or something (maybe regulations prevent that). Maybe they could have rearranged seating so a really small person agreed to sit by the big guy. Worst case, they don't do anything but dude doesn't cause a scene. Maybe they offer him compensation that isn't ideal but at least it's something.
