I use Expedia (you can use any similar sites) and click on multi-city option
and book flights:
1. Phoenix-Athens
2. Barcelona-Phoenix

We flew RT to Stockholm, then took a cheap flight the Venice to start the cruise and a cheap flight from Barcelona back
