Pico de Gallo
1 medium white onion
8-10 firm roma tomatoes
5-6 jalapeño peppers (de-seeded)
Fresh cilantro
6-8 limes
Coarse sea salt

Chop the onion, tomatoes and jalapeño and combine in a bowl. Add fresh chopped cilantro to taste (i usually use about 1/2 a bunch) Mix and then add the juice of the limes and salt to taste (just shy of 1/4 cup for me). Chill and store in airtight container. It should last about 10 days.



This chopper or something similar makes this recipe super easy. I use the 1/4" blade for the onion and peppers and the 1/2" blade for the tomatoes
