5 hours is too long for a turkey IMO
Low and slow is fine for pork and beef but not so much for poultry. What temp are you smoking at?

I smoke mine around 325 to 350 and it takes the same amount of time as it would in the oven. There is plenty of smoke flavor in the bird in that amount of time. Good luck!!
