I ended up pushing the probe in a little further, and found the temp was 10 degrees lower. I pulled it out at 145 and put it in the oven at 375 for about 20 minutes to get it up to 365 and get the skin crispy. We ended up not eating for almost an hour after I pulled it out, but I tried some after letting it rest for about 20 minutes and it was great.
My MIL roasted a turkey in the oven as well, but it wasn't nearly as juicy or flavorful as mine. We gave the dry turkey to the kids and drenched it with gravy.
