Because it isn't all that good...
and let's face it, scoring on BYU isn't any sort of huge accomplishment so the context matters. I'm in no way saying that Utah's offense isn't good enough to beat BYU, or even help them win games, but I am being honest with my assessment of what their offense actually is and it actually is pretty mediocre. That's not "downplaying" it, that's being honest about it.
