I've taken classes at BYU. Once you get into the declared major programs the

only difference is the Utah student body is slightly more diverse. BYU is a great academic institution, but the actual curriculum and learning experience wasn't any more challenging. Because BYU has higher admission requirements, at the pre req level Utah will have more drop off.
