We just did this last week for a neighborhood bbq.
2- pork shoulders, 8 pounds each. It took 17 hours at 225 to get the meat to 205 temp. I don’t think it matters, but we used a Traeger.

I smoked 3 in my masterbuilt electric. In theory it doesn’t take much longer. A few comments, though

It's usually been closer to 2 hours per pound for us.

It can stall longer because there is more moisture in the smoker. You are right that airflow is key
