I think about how I cook with sourdough - much more time intensive and "pure" from both a historical and culinary perspective with breads. It has a subtle difference and more complex flavor compared to instant yeast. I do it because it's a fun hobby. But I would never criticize someone else's baking accomplishments they are proud of because they use quick acting yeast. Just because something becomes easier for the masses to use doesn't downplay your work or hobby.

There is still a lot of art to discover with bbq even when using a pellet smoker. And it's possible to enjoy a hobby for yourself even if it isn't as exclusive of a club as it used to be.
