Just got back from lake Powell today. We had both paddle boards and kayaks.
If you want to go and explore use a kayak. If you want to goof around and play balancing games, use paddle boards. They were both fun.

Kayak definitely. They are more versatile. You could carry your gear protected in a kayak.
