I actually heard the story from Rose during a Coach's Circle dinner shortly
after Yoeli signed with BYU.

First of all, Yoeli was not LDS in high school (however, I have heard that he did have an LDS girlfriend, but that didn't come from Rose).

Rose prefaced this account by stating that in their recruiting efforts, they really had a hard time with SL valley non-LDS kids signing with BYU; it just wasn't a formula where they had any real success--in fact, he described it as having been very, very unsuccessful despite their attempts.

Because of that, and because what Yoeli and his mom had initially stated very early on, they did not recruit Yoeli because they did not want BYU recruiting him--he had made that clear early on.

Then something happened that changed Yoeli's mind. Could it have been the girlfriend; maybe, but Rose did not share this information. He did say that in the winter/spring of Yoeli's senior year, Rose received a call (on a Friday or Saturday) from Yoeli asking Coach Rose what it would take to get on BYU's recruiting radar. Rose responded, "You just did." They then set up an appointment for Yoeli and his mother to come down either the following Monday or Tuesday.

When they arrived, Yoeli's mother directly told Rose up front that she did not want Yoeli to play for BYU. They then proceeded to spend the next several hours talking, touring, and explaining the mission of BYU and its sports. By the end of that meeting, his mother was very much on board with him playing for BYU. A scholarship offer was extended and accepted.

However, Yoeli's mother still had some apprehensions, so in the days following, she called some of the HS coaches in the SL valley and asked what Rose was like and how playing for BYU would impact her son. After those calls, she called Coach Rose and told him what she had done, and the overwhelming consensus reported back to her was that Coach Rose would take of her son. She then told him she was in full support of him committing/signing with BYU.

It was in the summer after high when word was received that Yoeli had been baptized.

Some time after Yoeli had signed, but before the fall semester had started, Coach Rose received a call from Yoeli's mother and she reported that she had purchased some BYU gear and had been wearing it around the house--but not outside, since her neighbors and acquaintances knew her to be anit-BYU. On the day she called Coach Rose, she said she had actually gone out in public wearing BYU gear--and she wanted Coach Rose to know that.
