I use peloton but don't have an ankle problem
I would get a gym membership and spend time there using the bikes to see if they are ok before buying one

Also swimming, pool

Also rowing machine

last thing is you're doing the right thing...diet is 90% of it. The exercise makes it go away much faster if you're dieting. Good for you and I hope this goes well.
