This is what I've been leaning towards.

Do you cook it all the way to the right temperature or leave it a few degrees lower for searing?

Just use a meat thermometer. Perfect medium rare on the cast iron.

132.5 degrees for 90 minutes then outdoor hot hot hot grill 1 minute max
