It's a pretty robust area of research. I'd start with
Why We Sleep by Matthew Walker, who is a leading researcher in this area, and wrote a pretty accessible, but detailed book discussing the research on sleep: https://www.amazon.com/dp/B06Y649387/ref=dp-kindle-redirect?_encoding=UTF8&btkr=1

You can find the research itself in the research databases of course too, but I'd start with this book.
