Man, I have had a decent streak where I'm getting better with each time, but my brisket from this Sunday was a total
step backwards. By far the worst I've made. The meat never quite plateaued so I never wrapped it. What a freaking mistake. It slowed in the 150s but kept ticking up slowly, so I went with it thinking maybe I would have some epic bark. Oh well, there's always next time!
At least I had my smoked beans and some pretty legit smoked chicken to console me.
