BYU still opens more doors, even if the professor is the same. They have more firms recruiting them, generally more quality students (academically) to start with (look at the numbers).
I am sure UVU is a fine school for some kids. Personally I would not send a child there unless it was solely to get into BYU a year or so later...unless my child really, really struggled academically and I felt UVU was their ceiling.
