You might be able to see ice on the copper lines coming from the condenser
or if you can open up the face of the AC unit (the coils) inside your home, you would see ice buildup inside that unit. Yes, ice build up would be very noticeable - like 1/4" to 1/2" of ice buildup all around the lines/in the coils.
