A few thoughts
Evolutionary biologists would say that we are all predisposed to high calorie diets. To make it worse, food today is engineered to literally be as addictive as possible.

Some disorders definitely play into things. Someone who doesn’t synthesize dopamine for instance (like me) can artificially get their dopamine by excessive sugar & caffeine consumption. Luckily, exercise can help with that too by providing additional endorphins.
Opioids are also a common way of obtaining artificial dopamine.
Dementia and other neurological disorders can have a significant impact on desire to consume certain foods, which is very unfortunate considering how addictive foods are becoming anyways.

A behavioral economics approach tells us that will power is finite so the best way to beat the trap is to eliminate the need for will power by making high sugar/high calorie foods or drinks inconvenient to obtain.
