My prevailing question with non-roasting methods (pit, smoked, fried, etc) is
How do you people eat Thanksgiving dinner without gravy made from drippings? No gravy? Fake gravy from a can?… The gravy issue alone leaves me unwilling to try other cooking methods. Not to mention the fact that my turkeys are always pretty much perfection (orange-rosemary brine, butter under the skin) and roasted.
