I break down the Turkey and remove the wings, back, ribs neck. I put those in a
Stock pot to boil with water. I take some of the extra skin and fat and put it in a small fry pan and render it down all while the Turkey is roasting. Buy the time it’s done I have a couple tablespoons of Turkey fat and a stock pot of bone broth.

So….. I have the best ingredients for making an awesome gravy.

Turkey fat roux and Turkey bone broth.
