It would if the person making hiring decisions likes football and Alabama.
First - saying that they played WR at Alabama doesn't tell you they were a 5*. You still have to either know it or look it up somewhere to see.

Second - I know people who would see that as a negative - just one more entitled jock like the ones they had to deal with all the time in school.

Or if it's someone from Auburn - do they have the same desire to interview someone just because they played at Alabama (you did mention just being a 5* recruit guarantees an interview)

I actually happen to know an ex-BYU player professionally who doesn't list that on his resume. He lists having attended BYU, of course, but he takes the approach of if they recognize his name as a player it's probably a good thing - and if they don't, nothing lost.
