98% of Utah Mexican Restaurants that I’ve been to have the following:

1. Nothing but Mexicans and or Central Americans working as servers and cooks.

2. All sorts of Spanish words and meal options that I struggle to pronounce.

3. Mexican music playing the background.

4. Wall decor that celebrates and displays Mexican culture.

What else exactly is required for the food to be certified as “authentic”?

Soooo… because a bunch of people from Mexico set up shop inside the imaginary state lines of Utah — the food is not “Authentic”. But if the same people, set up the same restaurant, menu, decor etc… in southern Arizona — it would be “Authentic”?

BBQ is treated the same way in Utah. People just need to close their eyes, eat the BBQ or Mexican food and pretend they are in Texas so they can just enjoy it instead of pretending that good food can only be crafted within certain imaginary state lines.
