Some non sushi places have started cooking your salmon so that it is medium or medium rare, like a steak.

No thanks. Don’t dry it out but please just cook the whole thing.

I still see cooking shows where people say to cook salmon to 145. That's insanely overcooked. Wild salmon

Brisket is better than salmon. I don't think we disagree. I just don't have 12-14 hours all the time.
