Less than 24 hours after getting released from his NLI from Stanford, BYU had an official on campus visit set up. Clearly there are things working in the background that aren't visible to us. Coaches can't comment on a player until they sign a NLI. They can't have direct contact with a player not in the portal that has a NLI signed with another team. All the communication has to go through intermediaries. They can't reach out to a player, even through an intermediary, if he's signed with another team (Stanford).
What that tells you is that Elijah reached out to BYU to find out if we might be interested in him. He got a "yes" back, so then he went to work trying to get released from his NLI with STanford. In the mean time, BYU was setting up for an official visit to be ready to go as soon as they could have him on campus.
How many of these types of things are going on behind the scenes? There's no way to know, but given how much KY is saying he's working 20 hour days, there's not a tiny pool of players that are options for him.
