What about substituting the plane for the TGV train? I think the train would
actually be more time efficient, and its incredible to see the French landscape. The one change I would make is to visit the Provence area. I think its way better than Nice, but that is probably just personal preference.
Also, if you were going this direction, the below gardens were the highlight of my family's trip. Just an incredible place:
