Is there something to suggest that kids like this won't just lie?
I think the fact that most colleges nowadays are requiring essays and weighting them more is evidence that this has little to do with BYU actually vetting the student population and more to do with just reflexively following the herd.
You have identified a real problem but I doubt that essays help much.

It’s really not. Too many kids are going to BYU in spite of what it stands for and not because of it.

Letter of Rec may speak to how aptly an applicant fits at BYU's mission. Essays don't. At all. Anyone can say whatever

This would be a good data point, except seminary teachers are so inconsistent. Some are all in on the rec, some couldn't
