I thought a big reason for the snub was the prohibition on Sunday games.

I can appreciate why that is a "deal-breaker" for BYU.... but it literally broke that deal. No such baggage from the Utes. BYU is certainly a bigger national name than the Utes, but the Big 5 (and ESPN, more to the point) don't want to be bothered by such complications.
