I think the coaching is improving
If you take the coaches one by one:

Bronco - He could get an HC gig despite the opinion of some on here. Just about any G5 school in need of an HC would hire him, as well as some P5 schools. Or he could go be a DC anywhere.

Anae - He's been in coaching a long time. He could easily get hired somewhere else. He's twice now proven to be a very competent OC at BYU, twice rebuilding an offense from the ground up. If he wanted another OC gig, he could get one.

Holiday - Proven coach, proven recruiter. We're lucky to have him while we do.

Beck - Was building a nice coaching resume before BYU and has only added to it thus far. Can't see him pulling a Doman and selling hoops post-BYU.

Atuaia - Though not confirmed, I think it's very likely that he was pursued by other schools this past off season. He's building a very solid reputation as a great recruiter and coach.

K-Pop - Resume is lacking outside of BYU, but I think he's done enough to get hired on somewhere else if he wanted to.

Tidwell - Can we complain too much with the work he's done at MLB? He's getting older, though, and seems content to just be where he's at.

Kaufusi - He's got a decent resume. I'm not overly impressed with the work he's done at BYU. We struggle to recruit DL's. That's his position to stock. Our DL has usually only been decent during his tenure. Had definitely hoped for more when he came from Utah.

Howell - After last season, I wouldn't be sad to see him go and don't care to make an argument if he could get hired on somewhere else.

Of course not much has changed in the last few years on the defensive side of the ball, but I feel we've made significant improvements over Doman, Dupaix, Weber, Reynolds, and Cahoon (though I was fairly happy with the progress Cahoon was making as a coach). We've still got too many coaches who look content to stay at BYU forever (it's okay to have a few of these guys, but too many produces complacency), but 8 or 9 of 10 have proven to be very competent at their jobs and could easily find coaching work elsewhere if they were all let go today.
