It's the perception, almost as much as the principle.
I'm a pretty devout Mormon, and I could understand if BYU played on Sunday.
But the Church has drawn a line in the sand, so to speak. They ain't crossing it. In some ways, the Church wouldn't mind saying to the world "we had to make the huge sacrifice because the alternative was inconsistent with our principles."
