It's not so much Sunday as it is the Sabbath. In Israel the Sabbath is Fri/Sat.
As a vacationer, I have personally officiated at the sacrament table on a Saturday morning in the chapel of BYU's Jerusalem Center (which has floor-to-ceiling views of the Old City, BTW, and is highly recommended). Israel's Sabbath runs from Friday evening to Saturday afternoon, and the Church respects and follows that national custom.

As you say, some work functions are "oxen in the mire" and get a hall pass from the GAs, but intercollegiate sports isn't one of those functions.
