Anybody have any suggestions of how to cook 20 steaks for a Christmas party? How
Would I get them to all be ready at the same time? I prefer pan seared but it seems like grilling might be the way to go for bulk quantity steaks.

After searing, how long do they take to reach medium rare?

I should pay attention to that. Maybe 10 minutes? Enough time to plate the rest of the meal

For 20 steaks, I would use my smoker (or your oven) and a grill

This is intriguing. How long in the pan for each side?

I've been meaning to do this but haven't yet. Probably the best thing about using outdoor cooking

Do you use a thermometer or eyeball it?

I've tried using the thumb test but I'm a worrier so I like to use a thermometer.
