Nobody makes cast iron like that anymore. Lodge is the only USA made cast iron and they don't smooth it, even after decades of cooking it'll still show a rougher grit.

Anytime you're in an antique shop look for Wagner cast iron.

I think it would work fine. Heat is heat. I bake in my smoker all the time.

Sounds good. My personal preference is to not use the liners. I get why people do, because cleanup is way easier
