Every person the coaching staff redshirts represents a future year scholarship that isn't available. So if Jimenez doesn't project to be a significant contributor, I could see them letting his eligibility keep running so as not to tie their hands with future signees.

Yes. Every athlete has 5 years to complete eligibility once enrolled full time.
