Naked BBQ in phoenix. They do a really good job... brisket is spot on as well and pulled pork. Their ribs have a little more chew to them which I ended up liking a lot. I typically am not a rib guy but these were fantastic.

Ribs should have chew and not fall off the bone.

They shouldn't have chew or fall off the bone, but you should be able to easily pull the meat cleanly off the bone.

A properly cooked rib should only pull away from the bone where you bite.

Technically you do have Memphis style ribs which are generally more chewy

Nope. Like USMCdad said, if you can't slice the ribs it's overcooked.

If you are in the east valley... Caldwell’s BBQ is amazing as well
