For serving without the meat falling off the bone I think it’s overcooked but I do like a rib that you have to bite to get off the bone but the meat comes off the bone without much chew required

Ribs should have chew and not fall off the bone.

They shouldn't have chew or fall off the bone, but you should be able to easily pull the meat cleanly off the bone.

A properly cooked rib should only pull away from the bone where you bite.

Technically you do have Memphis style ribs which are generally more chewy
