I'm a KCBS Certified Judge, so those are the guidelines I go by.
But.. as I said, I don't necessarily cook them that way for my friends & family.

Ribs should have chew and not fall off the bone.

They shouldn't have chew or fall off the bone, but you should be able to easily pull the meat cleanly off the bone.

A properly cooked rib should only pull away from the bone where you bite.

Technically you do have Memphis style ribs which are generally more chewy
