I had hard classes at BYU where the professor was gone half the time
this doesn't necessarily make the class better because the tests were difficult. I would judge the education more on the quality of professors/staff, prestige and reputation of the school, facilities ($$$), external collaborations, overall experience. BYU is and was a great school to attend and is amazing for the tuition which I think was the main point of the comment (bang for your buck). No, easier classes aren't necessarily 'better'.
