QB runs are more dangerous when a team is playing man to man, not zone. Which kind of ruins your point, doesn't it?
Way oversimplification here, but when a defense is in zone, the various zones are covered and defenders are looking back to see who is entering and leaving zones. Big QB runs tend to happen when a team is playing man to man defense. Because the defender sticks to his assigned offensive player and often clears the area/zone with that offensive player - with all of his attention on the assigned offensive player and his back turned to the QB.
You've mentioned being at the games due to having student tickets. So maybe you've seen lots of games but not necessarily ever heard the color commentator explain why certain plays go the way they do.
But you should probably know that one thing they tend to agree on is that man to man defenses leave the defense more susceptible to the QB run.
