They probably undercooked it

If they bring you medium rare, they can bring it up to medium easily. But if they bring you medium they risk you saying it’s overcooked, and they can’t bring it back. Not sure why anyone would send back a medium rare steak, but I’m sure it happens.

I had a bite of his KC strip, but it was also cooked medium, and the overall experience was worse than my filet mignon.

FM shouldn’t be done past medium (medium rare, really) but you should switch cuts. Do a Rib Eye or New York done medium
