Lot of carbs and fat in a PB and J. Infact thats one of the foods that athletes use for bulking.
Kale has its place but if you wanted healthy for a sandwich id go with something that has a higher protein to fat content.

While Keto is a bit the craze, just remember all fruits and veggies are primarily carbs.

yes, but your body generally has certain minimum glucose requirements. e.g., some limited cells only process glucose
