Met a guy this week who has been to all 491 National Parks
Asked him the same question. Some of the predictable parks but one interesting park on the list was a pro on the Aleutian Islands that only receives 100 guests per year. The only access is via a small plane.

It's not a national park, but you need to do the Sawtooth Nat'l Forest. Rent a cabin or camp at Redfish Lake. Do a float
