I've been doing a lot of salads for lunch. I try to throw in a lot of veggies and some protein, usually leftover chicken
or steak or something (last night we had roast, so I chopped it up and used that). Topped it with onions, peppers, carrots, green olives, feta, and some Italian dressing. It's usually my first meal of the day and with enough veggies I'm usually pretty full until dinner.
