That's potentially an issue with any divisional setup, this might actually be better in that regard
In any setup with divisions you have to worry about a team going 6-2 in conference to win the division, but 1-3 OOC to finish 7-5, then winning the CCG against your 11-1 team. Now you're stuck with an 8-5 conference champ.
In the pods scenario it's more likely to get a not-that-great entrant into the #1 spot. But for them to win the conference championship, they need to pull two major upsets now, not just one. And in that scenario, they've just beat two top 15 or so teams so they'll probably have a fair amount of respect.
That said, I should caveat this that its with the assumption that the playoff expands, effectively guaranteeing the Big12 champ a spot (whether explicitly in a 5+1 setup or indirectly in a top 6 conference champions setup)
