I’ve always just done like you did but then seared on the pellet grill
Next time I might try throwing a cast iron skillet with some butter and other stuff in there when I turn it up to 500 to sear. That sounds like it would be better.

I do mine the “traditional” way - hot and fast. 40 minutes, turning every 10. I cut it where the grain shifts
