I recommend a hand gun. Go to a range and rent a bunch of guns for her to try.
Talk to the guys at the range and get their thoughts. Let her own the process as much as she can and have them explain details about each gun to her. This wont be hard, gun guys like to talk and show off their expertise.

You will get a lot of recommendations in this thread but the most important thing about owning a gun is having one she is familiar with and comfortable shooting. If you buy a gun blind and she doesn't like it or feels its too much for her, you will have a very expensive paperweight in your house.
