It's a completely one-sided thing.  The handshake is no big deal for the winner.  Forcing the loser to shake hands is requiring them to be better than the winner.  All the winner has to do is try not to gloat.  It's not even.

If you want sportsmanship, do the handshake at the beginning of the game.
