Note the 124 pass efficiency in addition to the rushing yards. BYU shut it's opponent out, largely because the offense was so physically dominant with Taysom controlling the ball.
Tanner as a freshman starting his 3rd game against a mediocre G5 team:
Pass efficiency is essentially the same at 126, but Tanner loses 9 yards on the ground. BYU dominates the ball but can't score TDs. Tanner has 2 picks and a fumble against a crap G5 team.
You asked for signature wins in addition to Texas. What opportunities against marquise teams did he have (uninjured) besides Texas? But here are some really good games that I think rank right up there with the great BYU QB performances of all time.
268 yards passing plus 72 yards rushing on the road against a quality P5 defense that had been designed to shut him down (partial game stats, WHILE HURT)
