Utah returns over 1000 receiving yards if we include the TEs.
Here's what Utah has coming back to catch passes (everyone with at least 5 catches):

Singleton. 33 for 464 and 4 TD
Wilson. 15 for 183 and 2 TD
Simpkins. 19 for 158 and 1 TD
Fulks. 6 for 57
McCormick. 11 for 109
Young. 5 for 21
Fakailoatonga. 16 for 171
Handley. 33 for 454 and 4 TD
plus Carrington (for Oregon). 112 for 1919 yards and 15 TDs

Total, without Carrington, is 138 catches for 1617 yards and 11 TDs. With Carrington it's 250 for 3536 and 26 TDs.

Here's what BYU has:

Balderee. 13 for 156 and 2.
MLP. 33 for 389 and 3.
Marshall. 7 for 66 and 1
Hifo. 11 for 58
Trinnaman. 28 for 321 and 1.

So that's 92 catches for 990 yards and 7 TDs.

That's why Utah's WRs are at least more experienced (and I'm a Ute, so I'd argue more talented) than BYU's, and that was without Carrington.
